Baked Eggplant Cutlets: Gluten-Free, Plant-Powered Comfort Food
Craving something crispy, cozy, and totally satisfying… without the usual post-meal slump?
You’re in for a treat! This is one of my go-to comfort food glow-ups: golden, garlicky, and 100% gluten-free, dairy-free, and egg-free.
Yep—crunchy goodness that’s kind to your gut and your hormones.
✨ Say hello to my Baked Eggplant Cutlets.
🌿 Why Your Body Loves This Dish
Let’s break it down:
🍆 Eggplant’s Purple Skin = Brain Food
That gorgeous violet hue isn’t just pretty—it’s packed with antioxidants, especially a compound called nasunin. Nasunin helps protect your brain cells from oxidative stress (aka the stuff that wears your brain out). In a world full of overstimulation and information overload, our brains deserve a little love.
🌱 Flax Batter = Hormone-Friendly + Gut-Loving
Instead of using eggs, I whip up a quick flaxseed “egg” that binds beautifully and adds plant-based omega-3s. These healthy fats help balance hormones and support a healthy inflammatory response. Plus, flaxseed is rich in prebiotics, your gut microbiome’s favorite snack.
🔥 Baked, Not Fried = No Bloat, No Regrets
By baking these cutlets, we keep the oil levels low, which means this comfort food won’t leave you feeling sluggish or bloated. You get all the crispy satisfaction without the greasy aftermath. That’s a win-win in my book.
🍞 A Quick Tip: Make Your Own Gluten-Free Breadcrumbs
I like to save the ends of my gluten-free bread or any leftover gluten-free rolls. I let them dry out until they’re nice and hard, then toss them in the food processor to create my own breadcrumbs.
From there, I add dried herbs and spices like garlic powder, basil, parsley, oregano, crushed red pepper, and a little sea salt. Store the seasoned mix in a jar and voilà! You’ve got clean, flavorful breadcrumbs ready to go.

- In a shallow bowl, mix together the breadcrumbs and all the seasonings.
- Dip each eggplant slice into the flax egg, coating both sides evenly.
- Press each slice firmly into the breadcrumb mixture, coating both sides.
- Arrange slices on the baking sheet, leaving space between each for even crisping.
- Lightly mist the tops with olive oil spray (optional, but it helps with browning).
- Bake at 425°F for 25 minutes, flipping halfway through (around the 12-minute mark).
- When edges are deep golden and a paring knife glides through easily, they’re done!
- Let the cutlets rest for 2–3 minutes before serving.
