I’m so excited to share something with you today that will make your taste buds do a happy dance—vegan pumpkin pie! 🌱✨ And don’t worry, this isn’t just any pumpkin pie. This is the result of years of trial and error, and a lot of cinnamon-induced frustration. But trust me, it was worth the journey, and now I have a recipe that’s as perfect as pumpkin pie gets.

Now, if you’ve ever made a pumpkin pie from scratch, you know it’s no walk in the park. I’ve had my fair share of pie-making disasters, so let’s take a trip down memory lane together, shall we?

The Epic Journey to Perfect Vegan Pumpkin Pie

Let’s rewind to high school—when I first became obsessed with pumpkin pie. I thought, “Why not make it from scratch with fresh pumpkins?” Big mistake. Not only did it take me FIVE hours (yes, five!) to prepare, but the result was… let’s just say, less than stellar.

Then I thought I’d play it safe and trust Libby’s canned pumpkin—after all, they’ve been making pumpkin for decades, right? Well, the recipe called for eggs and sweetened condensed milk, which, while tasty, was WAY too sweet for my liking. And don’t get me started on the nutmeg incident. You know it’s bad when your family starts questioning if they’ve eaten too much spice.

Eventually, I figured out that eggs and dairy were causing me some health issues (you know, inflammation—the thing we all want to avoid). So, I tried a coconut-based vegan version, and well, let’s just say it tasted like coconut… not pumpkin.

Persistence Pays Off—And So Does Healthy Baking!

It wasn’t all doom and gloom though. After a little break (and a lot of cinnamon rolls—who’s judging?), I came back with a fresh perspective: healthy baking is all about trial and error—and embracing the challenge.

I found the golden ticket—unsweetened almond milk and cornstarch as a replacement for dairy and eggs. Can you say game-changer? This combo has been delivered every single time, and let me tell you, this pie is everything! It holds its consistency, and you can actually taste the pumpkin—not the coconut or spices!

Tips to Make This Vegan Pumpkin Pie Even Better 🥄✨

  • No Corn? No Problem! If you’re sensitive to corn, swap out cornstarch for potato starch or arrowroot powder. They work just as beautifully.
  • No Cracks, Just Pie Magic! Ever baked a pumpkin pie only to see a big crack running down the center?  To avoid this, don’t cool it down too quickly. Once the pie is done, turn off the oven, crack open the door, and let it cool slowly inside. After the heat has dissipated, place the pie on a trivet to cool completely. This will help prevent cracks and keep your pie looking gorgeous.
  • Stash for Later! This pie keeps well in the fridge for up to five days, so it’s perfect for enjoying over several days (if you can resist eating it all in one sitting!).

The Moral of My Pumpkin Pie Saga

Here’s the key takeaway from my years of pumpkin pie experimentation: Never be afraid to fail! It’s all part of the process, and with enough persistence, you will find your way to greatness. Whether you’re swapping out unhealthy ingredients or perfecting a recipe, every mistake is just one step closer to success.

So, without further ado, here’s the recipe you’ve been waiting for. Trust me, it’s worth the effort, and I’m so excited for you to try it! 🥳
