Summer Corn Salad

I got this recipe from my girlfriend who got it from one of her girlfriends, and that’s how us women do things! Sweet summer corn is crunchy, juicy and will make this salad a huge hit.

6 ears of corn

1 can of black beans drained and rinsed

½ cup chopped cilantro

Juice of 1 lime

Pinch of sea salt

1 pint sliced cherry tomatoes

½ cup feta cheese (optional)

Directions:

Shuck the corn and cut the kernels off the cob (yes, the corn is raw), place in a medium size glass bowl.

Add the cilantro, tomatoes, black beans, salt, and lime juice, stir until well combined, add feta if desired.

A note about feta cheese: Most of the feta in the United States comes from cows, if you read the labels and shop at a specialty store you can find it from sheep which is easier to digest.
